why am i vegan? let's get this out of the way (oh and a vegan dressing recipe)

i am a vegan.
have been fully vegan for over two months.
i was vegan for about five months last year, but i didn't keep track of my nutrients or vitamins and got sick.
but now i have a pretty good balance going on and i make sure to take my supplements.
anyways, why?
why am i vegan?
i get asked that a lot.
well, that's not exactly a simple answer, but here, let's use these two terms: ethical and dietary.
those are two types of vegans.
and, well, i am vegan for both reasons.
i have no issues supporting local farmers who don't steal baby cows from their moms, or local farmers who treat their chickens like they are actually alive (so, very well), but factory farms are absolutely horrifying.
i adore animals, they are a huge part of my life, and it had gotten to the point where eating factory farmed meat, eggs, or milk was very emotionally hard for me, and for good reason, so i stopped eating factory farmed animal products.
i also went vegan for health reasons.
i have really bad joints (it's from a genetic condition, so incurable, only treatable), and consuming dairy products really messes with my knees.
it got to the point where i could not walk or sit down without my knee coming out of place.
so, i decided to try out going vegan, and in all honesty, i started out to try and lose weight, which did happen, but i found so many more benefits from it than that.
for the first time since i started maturing, i didn't have acne, my knees stayed in place when i went skiing, as well as when i sat down, and i just felt happy.
i am not saying that going vegan (notice i did not say veganism, i try and stay away from isms, my personal favorite rule from "Ferris Bueller's Day Off") will change everyone's lives, or that it will necessarily work for everyone, but it has certainly helped me.
also, if you want me to put out more recipes than the one below, i will have you know i am gluten free and mostly soy free, so there should be some options for those of you with similar dietary restrictions.
anyways, in short, i am vegan because i feel better on a vegan diet, and i feel it is better for animals to not be kept in factory farms.
oh and before you say vegan, gluten free food is disgustingg, my food is not boring or gross, it's pretty amazing.

oh and yes, i ate all of it with the chopsticks.

okay, anyways, recipe. hmm, which recipe should i give?
lets do a high protein salad with my favorite dressing.
most people have salads that are basically just lettuce and dressing, and i have no clue why haha!
salads are so versatile, and i tend to have really hearty, protein rich ones.
this is my basic high protein salad layout.
  • fresh baby greens OR kale OR chopped lettuces OR spinach
  • some type of bean (i like chickpeas, you can marinate them beforehand, so good!)
  • a high protein grain (i tend to use quinoa or buckwheat)
  • avocado (avocado is the very best thing on the planet, no questions asked)
  • chopped veggies, i like cherry tomatoes, carrots, bell peppers, cucumbers, and any other veg you have in the fridge.
  • nuts! such good fats and protein :)
  • fruit! apples, strawberries, raspberries, clementines, or anything else you want to put on :)
  • a good dressing. this is kind of the main point of this recipe.
this is my go to vegan dressing. take a few spoonfuls of tahini, add some water to thin it out and stir until it is a thin mayonnaise consistency.
then add a bit of maple syrup, liquid aminos or soy sauce, a bit of spicy mustard, and then i add some ginger garlic paste.
i like to add cayenne pepper to mine, but you can totally leave that out :)
